When it comes to barbecue, choosing your fuel matters as much as choosing your ingredients. Each type of fuel has its own character, shaping not only how you cook, but also the flavours and the overall experience.
Hot smoking
La fumée est le seul ingrédient qu’on ajoute sans jamais le poser sur la viande. C’est aussi celui dont on parle le plus mal : on en met trop, on se fie à sa couleur à l’envers, et on juge le résultat sur un cercle rose qui ne prouve rien. Ce module reprend le fumage à chaud depuis le bois — pas depuis la recette.
